Poached from some of the best London hotels, the on-site team of expert staff are testament to the fact that at The Salutation, going the extra mile is simply the norm. Following the launch of the restaurant this month, The Salutation will offer a wealth of dining options from dawn till dusk. With a profound emphasis on the local and seasonal, head chef Shane Hughes has created stunning menus that celebrate the finest ingredients from the Garden of England. In collaboration with renowned restaurateur Richard Phillips, they’ve developed multiple dining experiences, from moreish ‘small plates’ at lunchtime through to knock-your-socks off à la carte and tasting menus in the evening. 80 The lunchtime menu will focus on a series of small plates and sharing dishes, such as violet artichokes cooked in goose fat; white crab and fennel sausages; and shallow-fried salted cod with citrus preserve – each dish small and perfectly formed for a relaxed lunchtime experience. Whether it’s a residents’ breakfast; in-between bites at the tea room, Sister Sally; lunch or afternoon tea on the terrace; à la carte dining; or an exciting tasting menu, Edwin Lutyens’ endlessly photogenic country-house masterpiece welcomes guests and visitors all year round. In the evening, a full à la carte menu will include dishes such as smoky duck breast with poached lobster; lemon sole meuniere; and slow-cooked summer lamb with a tomato and lamb breast sandwich.
