Halloumi, Houmous & Tracklements Green Tomato Chutney Flatbread

Serves: 4 Prep and cook time: 20 mins
Ingredients:
For the slaw:
• ½ red cabbage, shredded
• 2 peppers, any colours, finely sliced
• 1 carrot, grated
• 2 tbsp red wine vinegar
• 4 tbsp natural yoghurt
• Good pinch of salt and a generous grind of pepper
For the flatbreads:
• 25g pine nuts
• 250g halloumi, sliced into 12 slices
• Olive oil( for brushing over the halloumi)
• 4 tbsp houmous
• 4 flatbreads
• 4 tbsp Tracklements Green Tomato Chutney
Method:
1. Mix the slaw ingredients together thoroughly and set aside.
2. Pop the pine nuts in a pan on the barbecue and toast until lightly golden then set aside.
3. Lightly brush each side of the halloumi with olive oil and carefully place on the barbecue for just a few minutes on each side( 2- 3 min) until lightly browned and gently crisped.
4. Warm the flatbreads on the barbecue.
5. Spread a layer of houmous on each flatbread, then a layer of green tomato chutney, before topping with a handful of the slaw, halloumi, rocket and toasted pine nuts. Enjoy!
