Lamb Kofta Flatbreads

Prep time: 10 minutes Cook time: 20 minutes Serves: 2
Ingredients:
• ½ tbsp olive oil
• 1 pack Heck Lamb & Mint Burgers
• 1 tbsp za’ atar spice
• 4 tbsp Greek yogurt
• 2 small handfuls of mixed leaves
• 2 lemon wedges
• ¼ red onion, sliced
• 30g feta cheese
• 2 tbsp pomegranate seeds
• 2 flatbreads
Method:
1. To a bowl, add the burgers and za’ atar spice. Use your hands to mix together and make 6 small koftas.
2. Place the koftas on a hot BBQ grill for 12- 14 minutes, turning half way. Place the flatbreads over the grill for a minute to warm through.
3. To serve, spread the yogurt over the flatbread, add the red onion, lamb koftas, pomegranate seeds, feta cheese and a squeeze of lemon juice. www. insidekent. co. uk • 131
