Cider & Mezcal Margarita

Ingredients :
• 50ml Zignum Reposado mezcal
• 75ml apple cider
• 25ml orange liqueur
• 1 lime wedge
• Apple slices for garnish
To rim the glasses :
• ½ tsp cinnamon
• 1 tbsp sugar
• 1 tsp salt
• Lime wedges
Method :
1 . Stir together the cinnamon , sugar and salt . Rub the rim of the glass with a lime wedge , then dip the rim into the cinnamon , sugar and salt combination .
2 . Fill the glass with ice .
3 . Fill a shaker with ice . Pour in the mezcal , orange liqueur and apple cider . Squeeze in the lime wedge then stir thoroughly to combine .

Rosemary Gimlet

Ingredients :
• 50ml Hernö gin
• 50ml rosemary syrup
• 60ml lime juice
For the rosemary syrup :
• 250g granulated sugar
• 250ml water
• 4 sprigs fresh rosemary
Method :
1 . To make the rosemary syrup , heat the sugar , 250ml water and 4 sprigs of fresh rosemary in a pan . Stir until the sugar has completely dissolved . Remove from the heat and cool completely before straining into a bottle or jar .
2 . To make the serve , add the gin , rosemary syrup and lime juice to a cocktail shaker with ice . Shake well .
3 . Strain into a chilled glass .
4 . Strain into the rimmed cocktail glass .
5 . Garnish with apple slices .
