Nalin ’ s Jaffna Mutton Curry

Ingredients :
Method :
• 40g ginger
• 35g garlic
• 8g mustard
• 250g onion
• 20ml vinegar
• 100g curry powder
• 20g salt
• 6g pepper
• 20g chili powder
• 8g cumin seed
• 10g turmeric powder
• 2g cloves
• 2g cardamom
• 10g curry leaves
• 2g cinnamon
• 6g pandan leaves
• 3kg mutton
1 . Begin by heating a pan with a small amount of oil until it simmers gently . Add a medley of aromatic ingredients , including ginger , garlic , mustard seeds , cumin seeds and finely diced onions . Allow this flavourful base to sauté for approximately 5 minutes , coaxing out their rich essences .
2 . Add the mutton to the pan . Season generously with curry powder , turmeric powder , and the spices . Stir the mutton delicately for an additional 5 minutes .
3 . Pour in just enough water to barely cover the mutton . As the concoction simmers gently , cover and allow to cook for 70 minutes , letting the mutton tenderise and absorb the full bouquet of flavours .
4 . Finally , bring your culinary masterpiece to perfection by adjusting the seasoning with a judicious amount of salt and pepper .
