The Bull ' s commitment to wine has seen them analyse restaurant wine lists , broaden their wine knowledge , and push boundaries to include options such as orange , volcanic and natural wines on their bulging list , which today boasts over a staggering 180 wines . They are also able to offer over 30 wines by the glass too , thanks to their Coravin system which allows a glass to be poured through the cork before argon gasses reseal the bottle to protect against oxidation and keep each pour as fresh and perfect as the first .
