Street Kings Smoke Shack , Whitstable
Owner and chef Tony de Sousa made his dream a reality when he quit his 9 to 5 . “ I ’ d always loved barbecuing and smoking food , ever since I bought my first coal barbecue grill 20 years ago ,” says Tony . “ Then I moved onto a small smoker and I ’ d be cooking American barbecue every weekend – ribs and cornbread , served with mac ‘ n ’ cheese and barbecue beans . I even barbecued our Christmas dinner . I then left my office job to launch our own food business - I purchased a Fornetto Smoker and Street Kings Smoke Shack was born ! We use a combination of hickory , oak and apple wood in our smoker . All the meat and produce is from Kent . We use our own unique dry rub and cook our meats low and slow to create tender , succulent cuts that melt in your mouth .” Favourites include The Big Gig Rib : super thick pork belly ribs , smoked for around four to six hours , propped up by a bed of fries and lightly glazed with a BBQ sauce .
