Chocolate & Raspberry Brownies ( Vegan ) Recipe by Lisa Marley lisamarleychef . com
Prep time : 10 minutes Baking time : 25 - 30 minutes Serves : 8 - 10
Ingredients :
• 100g plain flour
• 50g cocoa powder
• 1 tsp baking powder
• 110g plant-butter , very soft
• 110ml plant-based milk
• 100g cooked beetroot , finely chopped
• 100g black beans , drained and rinsed
• 60g frozen raspberries
Method : 1 . Cream the butter and sugar ( by hand , electric whisk or stand mixer ) until light and fluffy . 2 . Add in the milk , beetroot , flour , cocoa powder and baking powder . Mix to combine . 3 . Stir in the black beans and raspberries .
4 . Pour the mixture into a lined brownie tin and bake on 180 º C for 30 minutes . 5 . Remove from the oven and cool .
