Chestnuts Roasting

Ingredients :
• 50ml Masthouse Column Malt Whisky
• 15ml Asterley Bros Britannica Fernet
• 2 dashes Fee Brothers Aztec Chocolate Bitters
• 30ml charred chestnut puree
Method :
1 . To make the charred chestnut puree add 1kg of freshly roasted chestnuts to a blender , combine with 1.25 litres of water and 350g of soft brown sugar , then blitz .
2 . Decant into your vessel of choice and burn fresh cinnamon , nutmeg , cloves and cardamom and drop into the chestnut puree and leave to infuse ( for best results leave for 24 hours ).
3 . In a mixing glass over ice add 50ml Masthouse Whiskey , 30ml of charred chestnut puree , 15ml Britannica Fernet and 2 dashes of chocolate bitters , then strain into your glass of choice over 1 large ice cube and garnish with a still warm chestnut and an orange twist with cloves pushed through , serve and enjoy .

Ingredients :
• 50ml premium vodka
• 50ml Highwood Apple Juice ( or any fresh pressed apple juice )
• 1 teaspoon honey
• 1 wedge of lemon
Method : 1 . Add all ingredients to a cocktail shaker with ice and shake .
2 . Strain and pour into a martini glass with a slice of apple .
