Kids will love these magical jewelled biscuits ! When melted in the oven , the hard boiled sweets create a stained glass window effect .
Cook Time : 15 minutes Makes : 12 - 15
Ingredients :
• 115g softened butter
• 55g caster sugar
• 175g plain flour
• 1 tsp vanilla extract
• 1-2 tbsp of milk
• Fruit flavoured boiled sweets
Method :
1 . Set the oven to 180 º C / 160 º C fan or gas mark 4 .
2 . Line a tray with greaseproof paper or silicone baking mat .
3 . Using the Dualit Hand Mixer with flat beaters , beat the butter and sugar in a bowl until pale and creamy .
4 . Sift in the flour and continue to beat then add the milk .
5 . Change to the dough hooks and knead the mixture until you form a soft dough .
6 . Roll out the dough on a floured surface or straight onto the silicone mat until about 1cm or 1 / 2 inch thick .
7 . Cut the dough into shapes using cutters .
8 . Cut a hole in the middle of the shapes and place a sweet there – use half a sweet if the hole is small .
9 . Bake in the oven for 10-15 minutes until golden .
10 . Leave to cool when out of the oven until the melted sweet has hardened . Then transfer to a wire rack to finish cooling .
TOP TIP : Use different cutters to create jewelled biscuits in a variety of fun shapes .
Serves : 10-12 Ingredients :
• 125g salted butter , room temperature
• 150g soft light brown sugar
• 100g golden caster sugar
• 2 eggs
• 1 tsp vanilla extract
• 200g plain flour
• 1 tsp baking powder
• 1 / 4 tsp bicarbonate of soda
• 250g dark chocolate , roughly chopped
Method :
1 . Preheat the oven to 180 º C . Put the butter and sugars into a bowl and beat for 3 to 4 minutes ( use an electric beater if possible ) until light and fluffy . Beat in the eggs , one at a time and then add the vanilla extract .
2 . In a separate bowl mix the flour , baking powder , bicarbonate of soda and add to the butter mixture . Beat until just combined then stir through the chocolate chunks .
3 . Tip into a 20cm oven proof frying pan and bake for 25-30 minutes ( 25 minutes will be gooey , 30 minutes will be slightly more set ).
4 . Serve warm with vanilla ice cream !
