Make-Ahead Raspberry-Peach Crisp Breakfast Parfaits

Ingredients

• 12oz Vanilla Greek Yogurt

• 2/3 cup old fashioned oats (uncooked)

• 1/4 cup milk (any kind)

• 2 teaspoons chia seeds (optional)

• 1 teaspoon vanilla

• 2 peaches, chopped

• 6oz raspberries

• 1/4 cup sliced almonds

Directions

1. Stir together yogurt, oats, milk, chia seeds, and vanilla in a large bowl. Scoop 1/4 of the mixture into the bottoms of two 16oz mason jars with lids. Top each with 1/4 of the peaches and raspberries, and 1 tablespoon sliced almonds. Repeat layers then screw lids on top and store in the refrigerator. Parfaits will stay good for 2-3 days.

5-Minute Microwave Berry Cobbler

Note: Mason jars can be microwaved but do not expose them to extremes, of hot then cold the jars may break.

Ingredients

•3/4 cup strawberries or other berries of your choice

•1/4 cup powdered sugar

•1/3 cup flour

•1 tbsp white sugar

•1/2 tsp baking powder

•1 tbsp butter

•2 tbsp milk

Instructions

1. Chop berries and add to a mason jar. Add powdered sugar, stir to combine.

2. In a separate bowl, add the flour, white sugar, baking powder and mix to combine. Add the butter and rub in with your fingers until combined. Add the milk and stir (use your hands for this too, less dishes to wash).

3. Add the dough to the top of the berries (sprinkle with additional sugar, if desired).

4. Microwave on high for about 1 1/2 to 2 minutes.

5. Allow to cool because this will be screaming hot.

* This recipe will make 2 servings using 8 oz. jars. Make sure to only fill the mug no more than 2/3 full or it will bubble over during "cooking."
