Réjeanne Groulx had a long time dream of owning a B&B. Réjeanne worked in Human
Resources for years and had traveled to different parts of the world. “When I got out of the corporate world, this is what I wanted to do.” Réjeanne chose her B&B in Stratford, Ontario because she had been coming to the famous Stratford Theatre for 18 years when living in Toronto. “I kept coming to the theatre and then decided I wanted to live here, I love it."
Réjeanne is from in Jonquière, Québec and loves to cook. “I have been cooking all my life and cooked gourmet meals for myself almost every night, my mom used to call me every evening and asked what I made for dinner."
Those are great credentials for a bed and breakfast owner. Gourmet is a big deal here, as Réjeanne serves memorable breakfasts. It starts with juice made with fresh citrus followed by fruits, such as baked pears with oatmeal, cranberries and almonds, drizzled with yogurt and honey served with pecan scones. Poached eggs on a bed of arugula and harvest bread sprinkled with roasted shitake mushrooms and olive oil infused with garlic and parsley.
This is just a sampling of what you can expect here. She has owned Legacy House since 2010 and says, “I can’t believe it is four years already, I love it.”
Fruits Cup with whipped Vanilla Maple Yogurt (For 4)
Ingredients
2 Organic Oranges, cut strips of rind and orange segments
4 Organic Kiwis, cut 3 kiwis in bites size pieces and slice other thinly
Organic Strawberries, 1 cup sliced
Organic Plain Yogurt, 1 1/2 cup
Maple Syrup
Vanilla Paste
Method
Cut fruits and arrange in serving cups, putting a few segments of oranges at the bottom then bite size kiwis and strawberries.
Whip yogurt with small quantities of maple syrup and vanilla paste to taste. Be careful not to add too much maple syrup as it will mask fruits’ flavors. Decorate with slices of kiwis and orange rind. Serve with orange or strawberry scones.
