Sports nutrition program
AUSTRALIAN Almonds has a contract with Sports Dietitians Australia ( SDA ) which has since developed a series of nutritious recipes that include almonds as the core protein ingredient . As the demand for delicious and nutritious plant-based dishes continues to increase , we want to elevate almonds as a hero ingredient rather than being used simply as a garnish . These recipes were developed by Advanced Sports Dietitian , Michelle Minehan . The range includes everything from sweet to savoury meal options , as well as some great snack recipies . Almond & Chicken Ball Bowls Domestic marketing update
Serves 4-6 40 minutes
You can take some shortcuts with this recipe by using pre-cooked rice and salad mix . Bowls look really pretty but you can also combine all salad ingredients with the sauce to make a large coleslaw-style salad . Make the balls at the start of the week and use them in lunches . They also work well in wraps .
Ingredients
Almond & Chicken Balls 120g blanched almonds 2 cloves garlic 2cm piece of ginger 1 stalk lemongrass , roughly chopped Handful coriander leaves 1 red chilli , deseeded and roughly chopped 500g chicken mince 1 Tb oil
Almond Chilli Sauce 2 Tb almond butter 1 Tb chilli sauce 1 Tb soy sauce Juice of 1 lime 3 Tb natural yoghurt
Instructions
1 . Process almonds , garlic , ginger , lemongrass , coriander and chilli in small processor until combined ( it will resemble breadcrumbs ). 2 . Transfer to a medium bowl and combine with chicken mince . 3 . Roll tablespoons of mixture into balls . 4 . Heat oil in large pan over medium heat . Cook balls in small batches until browned and cooked through (~ 10 minutes ).
5 . Prepare almond chilli sauce by combining all ingredients in a small jug .
6 . Assemble rice , cabbage , lettuce , carrot and tomato in bowls . Add almond balls . Top with chilli almond sauce , flaked almonds and coriander leaves .
IN the last quarter , our domestic marketing program has continued to build greater prominence of Australian almonds to both established and newly acquired consumers . On 23 June , Australian Almonds exhibited at the Good Food and Wine Show in Sydney . This event showcases hundreds of local and international exhibitors of new food and beverages , including Australia ’ s best chefs and restaurateurs demonstrating recipes and delicious creations , live on stage . The key messages we are communicating are based around our two key content pillars - ‘ Sustainability ’ and ‘ Versatility and Innovation ’. These pillars have been a feature of our exhibit booth and have been accompanied by our almond macarons . Through these events we have been able to communicate with the attendees about the sustainability measures our growers have put into practice .

¼ red cabbage shredded
¼ iceberg lettuce shredded 2 carrots , grated 1 punnet cherry tomatoes , halved 2 Tb flaked almonds Handful coriander leaves
