You will need:
1 cup white sugar
4 T golden syrup
1 ½ tsp baking SODA
Method:
1. Line a large baking tray with baking paper.
2. Mix sugar and syrup in medium saucepan.
3. Gently bring to the boil and let it simmer for 3-5 minutes, till
it’s a golden honey comb colour – do not stir!
4. Remove from heat and quickly stir in the baking soda – this
will make it fizz up and give it the honey comb texture.
5. Pour out onto your tray and allow to cool
6. Can be dipped in dark chocolate to make vegan violet crumble
bars.

50ml of lemon juice
200ml of water

Combine sugar and water in large heavy based pot.
Still till sugar fully combined and bring to a boil.
Add the lemon juice, bring back to boil.
Lower heat and simmer, do not stir during this part, simmer
till syrup reaches 110-115 degrees Celsius.
5. Let cool and store in jar.
