You will need: ¾ cup coconut condensed milk 300g Tea biscuits (check ingredients to ensure vegan) ¾ cup melted coconut oil 1 tsp grated lemon rind 1 cup desiccated coconut 1 ¾ cups icing sugar 3 T lemon juice 2 T coconut milk Extra coconut for sprinkling Method: 1. In a food processor – process the biscuits till they are a fine powdery consistency. 2. Add lemon rind, coconut and pulse to combine. 3. Add condensed milk and coconut oil, process till fully combined and dough is sticky. 4. Spread into a 30x20cm tin. 5. Refrigerate for an hour. 6. Mix icing sugar, lemon juice and coconut milk in a bowl. 7. Ice the base with the icing, sprinkle with additional coconut. Originally a non vegan recipe that my mum made us when we were kids
