You will need: 1 T of Oil 1 clove of garlic minced 1 large onion chopped 3 sticks of celery chopped I large carrot chopped ¼ cabbage chopped 1 T vegan Worchester sauce 4 tsp vegetable stock powder 7 cups of water 1 tin of diced tomatoes 1 T of tomato paste 1 tsp of dried basil or one handful of fresh basil 1 cup of macaroni Method: 1. Heat oil in large saucepan, sauté garlic and onion till browned. 2. Add everything else except the macaroni and bring to boil, reduce to heat to a simmer and simmer for 45 minutes. 3. Add macaroni and simmer for further 15 minutes. 4. Serve with crusty vegan bread. Adapted from a non vegan recipe my mum used to make when we were kids.
