Rind of a lemon
Juice of a lemon
2 tbsp rum or whiskey
Method:
Grease a pudding bowl (approximately volume of 1L). Add all the
dry ingredients to a large mixing bowl and mix. Add the eggs,
lemon juice, lemon rind, rum and milk. Mix well. Put the mixture
into the greased pudding bowl. Place a piece of greaseproof paper
on top of the mixture and cover it with aluminium foil and tie
round the edge of the bowl. Steam the pudding for 2 1/2 hours in
medium heat. When firm, place the pudding mold on a rack
outside of the water for 10 minutes and unmold.
