Eggplant Parmesan
Omega-3 fatty acids
Are a collection of polyunsaturated fatty acids, including
eicosapentaenic acid (EPA) and docosahexanoic acid (DHA),
found in fish, and alpha-linolenic acid (ALA), which is found in
plants such as flaxseeds, walnuts and soybeans. Other sources
of omega-3 are pumpkin seeds, pumpkin seed oil, purslane,
perilla seed oil, krill, algae and olive oil.
Ingredients
3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
We need omega-3 fatty acids for most of our normal body
functions, such as controlling blood clotting and building cell
membranes in the brain, and since our bodies cannot make
omega-3 fats, we must get them through food.Omega-3-can
lower cholesterol level, reduce high blood pressure, protect you
from heart attacks, ease joint pains, fight wrinkles and skin
ailments, and improve your memory. There is an additional
benefit of taking omega-3 from food since the plants and fish
that contain omega-3 have other nutrients too.
People, who do not consume fish products or other
foods rich in omega-3, can take omega-3 supplements. Patients
with heart diseases may benefit of omega-3 supplements under
medical advice. There are few known and suspected adverse
effects of EPA and DHA consumed in excess of 3 grams per day
may include risks as increased incidence of bleeding,
hemorrhagic stroke, reduced glycemic control among
diabetics, oxidation of omega-3 fatty acids, forming biologically
active oxidation products.
1 (16 ounce) package mozzarella
cheese, shredded and divided
1/2 cup grated Parmesan cheese,
divided
1/2 teaspoon dried basil
Directions
Preheat oven to 350 degrees F (175
degrees C).
Dip eggplant slices in egg, then in
bread crumbs. Place in a single layer
on a baking sheet. Bake in preheated
oven for 5 minutes on each side.
In a 9x13 inch baking dish spread
spaghetti sauce to cover the bottom.
Place a layer of eggplant slices in the
sauce. Sprinkle with mozzarella and
Parmesan cheeses. Repeat with
remaining ingredients, ending with the
cheeses. Sprinkle basil on top.
Bake in preheated oven for 35 minutes,
or until golden brown
