“The Dove” - an Italian Easter Cake
INGREDIENTS
3 eggs
250 g sugar
a pinch of salt
100 g butter
1 cup of milk
1 citrus yogurt
1 tablespoon of almond extract
1 tablespoon of orange extract
1 tablespoon of baking powder
350 g flour 00
50 g potato starch
50 g chopped almonds
Candied fruit, grated orange peel, big grain
sugar, whole almonds
Steps:
1.
Beat the egg yolks and the sugar in a bowl

add the butter and the yogurt, the milk,
the almond and orange extract and mix .
3.
Add the flour, the potato starch, the ba-
king powder and mix.
4.
Beat the egg whites until foam, adding a
pinch of salt ,and pour into the bowl.
5.
Then add the floured fruit candies and
the grated orange, mixing carefully.
6. Put into the baking tin , and sprinkle with
chopped and whole almonds and sugar gra-
ins.
7.
Preheat oven to 170 degrees and then ba-
ke for about 45 min
