DRAGON FRUIT (PITAYA)
ICE CREAM BOWL
By Lara from Vanilla Crunch | Serves 1
1 dragon fruit/pitaya (red flesh) or use a white one with a pitaya powder.
¼ cup full-fat coconut milk
2 ripe frozen bananas
1 First, mix the frozen bananas. Add the coconut milk and the pitaya in
the food processor.
2 You can use a white flesh pitaya but know that the color won’t be as
bright pink and beautiful.
3 However, you can purchase pitaya powder over the internet or add
some beet root in order to get a similar color.
4 Finally put the mixture in a coconut bowl with a spoon.
5 You can decorate the ‘nicecream’ with fresh pitaya pieces if you like.

I enjoy sharing ideas with the vegan
community and I love to get inspired every
day. Turning vegan was the best decision I
made last year. Not only my skin and health
got better I also discovered many new amazing foods. There are so many possibilities to
eat healthy and vegan and at the same time
delicious food. I think too many people just don‘t know how
blog
easy it is to create a simple vegan dessert that is actually
good for you and does not poison your body with empty
carbs or sugar. This year I will launch my ebook and I hope
I can inspire many people with my vegan dessert ideas.
