DELICIOUS WRAPS

| Serves 1
¹⁄³ avocado
2 tablespoons of parsley
½ cup arugula
¼ cup diced, steamed butternut squash
¼ cup diced, steamed beets
1 teaspoon sunflower seeds
salt & pepper
1 To make, smash avocado onto a
small flat bread round.
2 Next, top it with parsley, arugula,
butternut squash and beets (the
beets and squash can be served
warm or cold).
3 Sprinkle on some sea salt and fresh
pepper, and top it with sunflower
seeds.
4 This can be enjoyed either open as
a salad pizza or folded like a middle
eastern wrap or taco.
5 So much flavor in this guy, and so
good for you, too!

which is why this flatbread
wrap is one of my favorite goto meals! And with ingredients like
avocado, sunflower seeds, steamed beets, and
butternut squash, I know I’m getting super healthy
ingredients into my meal! This wrap is also great if
you want to try adding any type of protein, which also
makes it an excellent lunch or more filling dinner.
