RAW CASHEW CHEESE
By Noémie from Paris by Vegan | Makes 1 round cheese block
3 cups cashews, soaked 12-14 hours
1 Blend the soaked cashews with probiotics and rejuvelac or water until smooth.
3 capsules probiotics or miso
2 Place in an ssealed bowl or container for 24 hours, at ambient temperature.
²⁄³ cup fresh rejuvelac or water
3 Season with salt and nutritional yeast, mix well.

3 teaspoon chives
3 teaspoon cilantro
4 Place in the fridge for 10 hours.
5 In a round shape container, place some clingfilm, then layer the fresh chives and
cilantro, then put the cheese, and let it rest in the fridge for 12 hours.
6 That’s it! Enjoy!! You can keep the cheese one week in the fridge.
