PEACH AND AVOCADO SALSA

1 ½ cup small diced peaches
1 medium avocado, diced
1 jalapeño pepper, seeded & minced (keep seeds if
you like it really spicy)
¼ cup finely chopped red onion
¼ cup Happy Hemp seeds, raw
¼ cup finely chopped cilantro
2 tablespoons olive oil
1 lime, juiced
Late summer is my
favorite food season.
Go to any farmers’ market or
grocery store and it is full of juicy peaches, plums,
nectarines, and berries oh my! It is the only thing that
gets me through the dog days of summer. Fruit is the
original fast food, but it can also make an exciting
ingredient. Whether you are looking for the perfect
balance of sweet and savory or a great way to add a
fun spin to classic dish. Try adding fruit to your next
grilled cheese or peaches to your salsa.

1 Add all ingredients into a bowl.
2 Toss until ingredients are well mixed. Be gentle
when tossing because you don't want the
avocado to get too mushy.
3 Serve with corn chips or on a piece of salmon!
