Fresh fruit tacos!
These delicious little fruit tacos are really no different than a salad with
fruit on top, but don't tell your picky eaters that! When we eat salads, it's
usually greens with nuts and fruit. These tacos have ground up nuts (not
all the way to a nut butter, but just chopped), romaine lettuce, fruit, and
some yogurt to top it off. All wrapped up in a whole wheat tortilla.
FRUIT TACOS
(when they don’t like salad)

4-6 whole wheat tortillas (8 inch or smaller)
1 cup whole almonds
½ cup chopped strawberries
½ cup blueberries
1 cup shredded romaine lettuce
½ cup chopped peaches (canned if not in season)
1-3 tablespoons yogurt
1 Take one cup of almonds and grind in a high powered
blender or food processor, just until it is in the crumb stage.
2 Assemble tortilla with crumbled almonds, fruit, and
lettuce. Top with yogurt. Fold like a taco.
