I think granola could be described as one of the perfect foods to have for breakfast or as a snack. You can’t go wrong with health benefits from fiber, protein, tons of vitamins and minerals, as well as antioxidants from fruit. It’s one of my favorite snacks that I carry around with me, since I’m nursing my baby and feel hungry so often. It’s also a healthy snack that my three-year-old never gets tired of! She asks for “grola” every time she eats yogurt. VEG AN GOODNESS Y DAIR FREE SUPER FO OD Homemade granola is really easy to make and it’s much better than most store-bought varieties. We know exactly what ingredients we’re using; no hidden synthetic additives or refined sugar. This recipe is super easy and economical to make since most of the ingredients can be bought in bulk. I often switch out different types of seeds, nuts and dried fruits to change up the flavor. healthy & wholesome EASY HOMEMADE GRANOLA By Cortney from The Daily Pea | Serves 8 ¼ cup chopped pecans YUM! Prep time: 5 minutes Cook time: 40 minutes 45 Total time: 45 minutes 2 tablespoons pumpkin seeds 1 tablespoon organic shredded unsweetened coconut 1 tablespoon organic orange zest or lime zest 3 tablespoons organic virgin coconut oil (melted) ¼ cup organic maple syrup or honey 1 cup dried organic blueberries 1    Preheat oven to 350° F / 175° C. 2    Stir together all ingredients except blueberries in a large mixing bowl. 3    Spread granola evenly on a baking sheet lined with parchment paper. 4    Bake for 30-40 minutes or until golden brown and slightly crispy. (Keep a close eye on it, as it can quickly overcook). Stir the granola around on the baking baking sheet and add the dried blueberries to bake during the last 10 minutes. 5    Remove from oven and completely cool before serving. MAG 23
