In the remote North East of Tasmania the farmers of Pyengana have been creating some of Australia ’ s finest artisan farmhouse cheese from rich creamy milk for over 130 years . Pyengana Dairy was founded in 1992 by Jon Healey , a fourth generation dairy farmer in Pyengana , who wanted to continue the tradition of making cheese on farms and Pyengana Cheddar was born . Pyengana Cheddar is crafted from milk sourced solely from Pyengana where the cows graze on fresh lush pastures all year round that result from the clean air , rich soil and water flow from two rivers . This predominately grass fed diet provides for rich , creamy milk that is not only great for making award winning cheese .
Pyengana Cheddar is renowned as one of Australia ’ s most awarded cheeses . Its unique flavour comes from the high quality ingredients , centuries old bespoke method of production and traditional maturing techniques . Apple season has started !
The fresh , sweet , crisp , mouth watering taste of a Royal Gala Apple signals the start of the apple season ! Royal Galas are the first apples to be picked followed by a limited season of Jonathan apples .
Royal Galas originated in New Zealand by crossing Golden Delicious and Kidd ’ s Orange varieties . It was referred to as Royal Gala after Queen Elizabeth II declared her preference for it . Galas are dense and crisp in texture .
The Jonathan apple was first discovered in 1826 as chance seedling on the farm of Philip Rick in Woodstock , New York . The fine textured flesh of the Jonathon apple is creamy yellow in colour with a crisp bite and lots of juice . Its flavour is mildly sweet with a tart tang and subtle hints of spice .
SELECTING : When selecting apples in-store , look for fruit with good colour and a sweet smell .
STORING : When you get your Apples home , always keep them in the fridge as they will stay fresh and crisp for longer . If you prefer your apples at room temperate simply pop a few in your fruit bowl in the morning and they ’ ll be ready to go by snack time .
ENJOYING : Apples are the perfect go-to snack – you can easily grab them on-the-go and they are an easy lunchbox option for hungry kids or adults . You can even make DIY apple chips that store well and are delicious to crunch on .
PREVENT BROWNING : Why do apples brown ? When an apple is cut into pieces , the white flesh is exposed to oxygen in the air . The apple flesh turns brown when it reacts to the oxygen , a process known as “ enzymatic browning ”. The name ‘ enzymatic browning ’ comes from the enzyme in the fruit , known as polyphenol oxidase ( PPO ), reacting with the oxygen in the air to turn the fruit brown .
To help stop apple slices from browning , try one of these handy hacks :
• Brush or dip sliced apples in lemon or fruit juice ( such as lemon , lime pineapple or orange juice ). The acidic juice will slow the oxidisation keep and add sweet tang to the fruit .
• Cut an apple in segments and then tie it back together with an to reduce their exposure to oxygen . Not only is it super simple , it also adds a ‘ fun-factor ’ to any lunchbox . You can also do this with spiralised apples .
• Store a cut apple in an airtight container in the fridge to slow the reaction – sometimes the simple techniques are the best .
• When preparing a fruit salad , pair your apples with acidic fruit , like mandarin segments , to keep the flesh white and crunchy .
• Or whenever possible , simply chop your apples just before serving .
