PERI PERI PINEAPPLE , CHICKEN AND AVOCADO BURGERS
Prep 20 mins | Cook 10 mins | Serves 4
2 x 200g chicken breast fillets , halved Olive oil , for brushing 4 thin slices fresh pineapple , peeled 2 tbs mild peri peri sauce 1 ripe medium avocado , halved lengthways , peeled and stone removed 1 tbs lime juice 4 brioche burger buns 1 baby cos lettuce , leaves separated 2 vine-ripened tomatoes , sliced Kewpie mayonnaise , for spreading
TROPICAL FRUIT SLUSHIE
Prep 15 mins | Serves 4
2 cups ice-cubes 2 Valencia oranges , peeled and chopped 1 ⁄ 2 small pineapple , peeled and chopped 1 ripe mango , peeled and chopped
Step 1 Place ice-cubes in a blender and blend until roughly crushed . Step 2 Add oranges , pineapple and mango . Blend until fruit is smooth and icy . Pour into serving glasses and serve .
Step 1 Place chicken between sheets of baking paper and using a rolling pin flatten chicken to 1cm in thickness . Brush chicken with oil . Step 2 Preheat a barbecue or a grill pan lined with baking paper over medium-high heat . Add chicken and cook for 2-3 minutes on each side until cooked through . Drain on paper towel . Brush pineapple with peri peri sauce . Char-grill pineapple for 1-2 minutes until golden and caramelised . Step 3 Combine avocado and lime juice in a bowl . Season with salt and pepper . Using a fork , roughly mash . Set aside . Step 4 Toast or grill the burger buns . Place bun bases onto a board . Spread with avocado then top with lettuce , tomato , chicken and pineapple . Spread remaining buns with mayonnaise . Sandwich burgers with the tops of the buns . Serve with roasted potato wedges , if liked .
POTATO , DILL , BACON AND EGG SALAD
Prep 20 mins | Cook 20 mins | Serves 6
1 kg small even-sized chat potatoes , scrubbed 200g rindless bacon , roughly chopped 3 green onions ( shallots ), trimmed and thinly sliced 1 tbs baby capers , chopped 3 cold hard-boiled eggs , peeled and chopped 11 ⁄ 2 tbs finely chopped dill 1 ⁄ 2 cup sour light cream 2 tbs lemon juice 1 ⁄ 3 cup whole egg mayonnaise Micro salad greens , trimmed , to serve ( optional )
Step 1 Place potatoes in a large saucepan of cold water and bring to the boil over medium-high heat . Reduce heat and simmer for 12 – 15 minutes until just tender . Drain and refresh in cold water . Halve potatoes lengthways and place into a large bowl . Step 2 Cook bacon in a non-stick frying pan , tossing often , over medium-high heat for 4 – 5 minutes until crisp and golden . Drain on paper towel . Add bacon , green onions , capers , eggs and dill to potatoes . Season well with pepper and salt . Step 3 Mix sour cream , lemon juice and mayonnaise in a small bowl . Spoon mixture over potato mixture and toss gently to combine . Sprinkle with micro salad greens ( if using ) and serve .
