Apple crumble Muesli bar slice 4 red apples, peeled and grated ½ teaspoon ground cinnamon ¼ teaspoon nutmeg 1 tablespoon lemon juice 2 tablespoons sultanas, optional Vanilla ice-cream, to serve Crumble 125g butter, slightly soft ½ cup brown sugar 1 cup almond meal (or gluten free plain flour) ½ teaspoon ground cinnamon ½ cup desiccated coconut, optional 1 cup gluten free cornflakes 2 cups gluten free rice puffs 1 cup shredded coconut ½ cup dried apricots, finely diced ½ cup dried cranberries (Craisins) ½ cup slivered or flaked almonds 200g gluten free white or milk choc chips (or a mix of both) 1 x 395g tin sweetened condensed milk ½ cup coconut oil, melted Preheat oven to 160°C. Grease and line a rectangle oven proof dish (16cm x 21cm). In a large bowl, mix together cornflakes, rice puffs, coconut, apricots, cranberries, almonds and choc chips. Toss to make sure everything is mixed through evenly. Preheat oven to 180°C. To make the crumble, cream together the butter and sugar using a fork. Add half the almond meal and cinnamon, mix to combine. Slowly work in the other half of the almond meal until the mixture is crumbly (you may need to use your hands). Add coconut and mix through. Add condensed milk and melted coconut oil to the dry ingredients and stir through until it starts to come together. Pour mixture into the prepared dish and press down hard. You can use the back of a spoon, the bottom of a glass or I place a small amount of plastic wrap on top and press down with my hands. If the butter and sugar mixture is too soft, pop it in the freezer for a few minutes to get it to harden slightly and make it easier to crumble. Cook in preheated oven for 35-40 minutes. In a large oven proof dish (20cm square) toss together the apples, cinnamon, nutmeg, lemon juice and sultanas. Feel free to make individual ramekins if you prefer. When ready, remove from oven and cool in the dish for 10 minutes then remove and cool completely before cutting into rectangles. Using a serrated knife works best. Distribute the crumble over the grated apple and bake in preheated oven for 30 minutes, until the apple is soft and the crumble is brown. Serves 10 Delicious served with ice-cream. Serves 4 Tip: I grate the apples as it reduces the cooking time (and that’s the way my mum did it and my grandmother before her), but if you prefer, you can chop the apples into cubes. It may need another 10 minutes in the oven. 6
