Panasonic, making gluten free bread easy Cinnamon fruit and raisin bread Few things make for a more mouth-watering breakfast than this combination of fruit and spice, and best of all, it’s actually healthy! Be bowled over by the amazing smell and let the astonishing taste tempt you back for a second serving. 315ml water 3 large eggs 45ml vegetable oil, butter or melted margarine 180g mashed ripe bananas or apple sauce 1 teaspoon salt 3 tablespoons brown sugar 2 tablespoons skim milk powder 450g rice flour 180g potato starch 80ml tapioca starch 1 teaspoon xanthan gum 1 teaspoon plain gelatine 1 tablespoon ground cinnamon 2 teaspoons gluten free bread maker yeast 15g raisins or chopped nuts Brioche loaf This is a rich, sweet bread recipe perfect for a brunch or breakfast treat. It uses less sugar than traditional recipes and can be made dairy free by switching to almond milk and using olive oil or dairy free spread. 200g full fat milk or almond milk 200g carbonated water 2 x 7g fast acting yeast sachets 60g caster sugar or coconut sugar 500g gluten free bread flour 1 teaspoon xanthum gum 1 teaspoon gluten free baking powder 70g butter, melted 2 eggs, beaten ½ teaspoon sea salt Once you’ve done this, you can introduce the remaining ingredients – adding them in the order listed. Set your bread maker to a Standard cycle for a white loaf. Let your bread maker do its thing for five minutes, then lift the lid and ever-so-delicately insert a flat surface, such as a plastic spatula, down the sides to prevent sticking. Close the lid once more and let the machine finish its work. Once your loaf is baked, remove it from the bread maker and leave it to cool, enjoying the mouth-watering aroma of cinnamon before tucking in! Place all ingredients into the loaf tin in the order listed and stir briefly. Place the loaf tin in the bread maker. Select Brioche program, Medium Crust and press Start . Apply your water, eggs, oil/butter/margarine and fruit of choice to the pan of your bread machine and give these ingredients a firm mix. Notes: If you use instant gluten free yeast, this recipe changes slightly. In this case, also add 1 teaspoon white or cider vinegar to the mix and bake using your bread maker’s Express setting, not standard.
