• BREWCRAFT - BREW YOUR OWN BEER
Chocolate
Orange
Ricotta Tart
The crust
120g cake flour
100g ground almonds
100g chilled unsalted butter, cubed
zest of 1 orange
50g castor sugar
yolk of 1 egg
1 – 2 tablespoons orange juice
The filling
250g ricotta cheese
250ml fresh cream, lightly
beaten
2 tablespoons castor
sugar
1 tablespoon honey
1 tablespoon fresh
orange zest
2 eggs, beaten
juice of 1 orange
200g dark chocolate,
roughly chopped
Pre-heat the oven to 180 °C.
Make the crust first.
Fling the flour, almonds, butter,
orange zest and castor sugar into
your food processor and blitz till it
resembles breadcrumbs; take care not to
over-process it! Now add the egg yolk and
enough orange juice to just bring it together;
you should have a firm dough.
Remove and knead lightly on a lightly floured
surface, and chill briefly. Roll the dough out to
line a 23cm loose-bottomed flan tin, and chill
for 20 minutes.
Meanwhile, mix all the filling ingredients
together and keep aside.
I like to bake the base blind so that I don’t
have a soggy-bottomed tart. Line the pastry
base with greaseproof paper and top with
dried beans. Bake for 12 minutes at 180 °C,
remove the beans, and fill the pastry base
with the filling.
Bake for 25 minutes, or until a skewer comes
out clean. Dust with icing sugar, top with
chocolate curls, and serve.

bottle your brew when the beer has finished fermenting, and adding only
the recommended amount of sugar to “prime” each bottle, will ensure
that your brew stays safely in the bottles.
It’s pretty hard to make a bad Homebrew, particularly if following the basic
rules. These days there are so many different kinds of ales, bitters, blondes,
browns, lagers, Pilsners, stouts, wheat beer to name but a few, that it is
certainly a hobby that can keep you engrossed for many happy hours.
