FEASTING • BREWCRAFT - BREW YOUR OWN BEER Chocolate Orange Ricotta Tart The crust 120g cake flour 100g ground almonds 100g chilled unsalted butter, cubed zest of 1 orange 50g castor sugar yolk of 1 egg 1 – 2 tablespoons orange juice The filling 250g ricotta cheese 250ml fresh cream, lightly beaten 2 tablespoons castor sugar 1 tablespoon honey 1 tablespoon fresh orange zest 2 eggs, beaten juice of 1 orange 200g dark chocolate, roughly chopped Pre-heat the oven to 180 °C. Make the crust first. Fling the flour, almonds, butter, orange zest and castor sugar into your food processor and blitz till it resembles breadcrumbs; take care not to over-process it! Now add the egg yolk and enough orange juice to just bring it together; you should have a firm dough. Remove and knead lightly on a lightly floured surface, and chill briefly. Roll the dough out to line a 23cm loose-bottomed flan tin, and chill for 20 minutes. Meanwhile, mix all the filling ingredients together and keep aside. I like to bake the base blind so that I don’t have a soggy-bottomed tart. Line the pastry base with greaseproof paper and top with dried beans. Bake for 12 minutes at 180 °C, remove the beans, and fill the pastry base with the filling. Bake for 25 minutes, or until a skewer comes out clean. Dust with icing sugar, top with chocolate curls, and serve.
