Sausage Ragu
Easy to make , freezes well and tastes great ! Serves 4 Ingredients : -3 tbsp olive oil -1 onion , finely chopped -2 large cloves of garlic , minced
-¼ tsp chilli flakes -1 tsp rosemary -2 x 400g tins of chopped tomatoes -6 pork or vegetarian sausages -150ml whole milk or milk substitute -350g of your preferred pasta -Grated parmesan and fresh parsley to top Method : 1 ) Heat 2 tbsp oil in saucepan over medium heat and fry onions about 7 mins or until translucent 2 ) Add garlic , chilli and rosemary and cook for another minute 3 ) Add the tinned tomatoes and simmer for 20 mins 4 ) Heat remaining oil in a medium frying pan over a medium heat and chop the sausages into 1-1.5cm pieces over the pan 5 ) Fry for 5-7 mins until golden then add to the tomato sauce with the milk and simmer for 5 more mins 6 ) If freezing , leave to cool completely and transfer to a plastic container or freezer bag . If not , then cook 350g pasta as instructed on the packet , drain , and mix into the sauce 7 ) Serve topped with parmesan and fresh parsley
Toby ' s Golden Syrup Biscuits Cheap and easy recipe that is bound to go down well ! Makes 12 biscuits Ingredients : -100g butter ( or vegan butter ) -100g light muscovado sugar -1 tbsp golden syrup -150g self-raising flour Method : -Preheat oven to 180 ̊C / 160̊C fan and line 2 baking trays with baking paper -Cream the butter and sugar in a bowl until light and fluffy , then mix in the syrup -Sift in half the flour and stir -Sift in the rest of the flour and mix with your hands until a dough forms -Divide into balls 4-5cm in diameter and place on the tray 8-10cm apart as they will spread -Lightly press each ball down with a fork until about 2cm thick -Place in the oven and bake for 12 mins until lightly golden at the edges -Allow to cool for 5-10 mins before attempting to move them from the baking sheet

CHEAP , HEALTHY , VEGAN RECIPE . SERVES 4-5 INGREDIENTS : -2 TBSP OLIVE OIL -1 ONION , CHOPPED -1 CLOVE OF GARLIC , MINCED -240G DRIED RED LENTILS -1 TIN OF CHOPPED TOMATOES -1 TIN OF COCONUT MILK -1 TSP CURRY POWDER -½ TSP CHILLI POWDER -½ TSP CUMIN -RICE ( ONE SERVING = 90-100G ) METHOD : 1 ) SOAK LENTILS IN WATER FOR 30 MINS 2 ) CHOP AND FRY ONIONS UNTIL TRANSLUCENT 3 ) ADD GARLIC AND SPICES AND COOK FOR ANOTHER MINUTE 4 ) DRAIN THE LENTILS AND ADD THEM , THEN ADD JUST ENOUGH WATER TO THE PAN TO COVER THE LENTILS 5 ) ADD TINNED TOMATOES AND COCONUT MILK AND MIX WELL 6 ) COOK FOR 25 MINS OR UNTIL THE LENTILS ARE SOFT 7 ) COOK THE RICE AS INSTRUCTED ON THE PACKET 8 ) SERVE WITH CORIANDER , NAAN , OR POPPADOM IF DESIRED
