PEF sterilizes by stretching bacteria up to its ruptures by strong and sharp high electrical fields . It is also used for breaking vegetative cells to ease its juice extraction or for softening solid foods : details .
Our PEF parameters fit many published sources with up to 5 logs inactivation of bacteria in juices at up to 250l / h and respectively less at 500l / h . The actual inactivation depends on all juice properties , such as its el . conductivity , pH , the total dissolved solids ( TDS ), its nutrients , types of bacteria , etc . It ’ s broad PEF parameters allow finding optimal production conditions for larger systems or using it for smaller production .
We offer to find optimal PEF parameters for your juice sanitation or for PEF assisted juice / nutrient extraction from roots , grass , etc ., or for softening hard meats , etc . with our flat PEF chamber .
