Blueberry Chia Kale Salad

Serves 4
Salad Ingredients:
• 3 bunches of kale, stemmed and chopped
• 1 cup fresh blueberries
• 1/3 cup dried cranberries or unsweetened dried cherries
• 2 medium carrots, peeled and shredded
• 1/3 cup chia seeds, toasted
• 1/3 cup sliced almonds, toasted
• 1 tablespoon chopped fresh mint leaves
• Ginger Soy Vinaigrette (see recipe)
Directions for making salad:
1. Combine kale, blueberries, carrots, dried
cranberries, chia seeds, almonds and mint in a medium
bowl and toss well.
2. Drizzle with the vinaigrette and toss again.
3. Season to taste with salt and pepper. Serve salad immediately.
Ginger Soy Vinaigrette Dressing
Ingredients:
• 2 tablespoons soy sauce or Braggs Amino Acid
• 2.5 tablespoons rice wine vinegar
• 1 tablespoon water
• 1 teaspoon minced fresh ginger
• 1 teaspoon honey
• 1 tablespoon sesame oil
• 2 tablespoons peanut oil
• Salt & Pepper to taste
Directions for making Ginger Soy
Vinaigrette Dressing:
Combine all dressing ingredients and whisk
together until blended.
