At Kittiwat, traditional curry pastes are flavored and seasoned to give each its own
unique essence. Says owner Kittiwat Chukkrabutr, “If it says it’s spicy, it’s spicy!”
Don’t doubt that, and be sure to have a posh Thai iced tea (complete with frozen
tea cubes so as not to dilute your drink) at the ready to temper the heat.
A recent transplant from Manhattan, Chukkrabutr is eager to join the Frederick
restaurant scene. You’re likely to see him at the restaurant, working seven days a
week in whatever role is necessary. Though Kittiwat is his first restaurant, he has
worked in Thai restaurants throughout his career, starting as a dishwasher, then
working his way up through the ranks.
Kittiwat’s menu is manageable, with the goal being to gradually introduce
Frederick to the real flavors of Thailand. The kitchen staff all hails from Thailand,
representing each area of the country, for a true mix of flavors. All of the dishes,
from starters to desserts, are made from scratch.
“Everything is the way we would do for ourselves,” Chukkrabutr said.
Each month, you’ll find specials featuring one appetizer and one main
dish on the menu, with the current season in mind. The time these
dishes spend on the menu is fleeting, so don’t hesitate.
