This course is designed to teach you the skills required to work in the hospitality industry and professional cookery . It will introduce you to the range of opportunities available and has a focus on professional cookery .
As part of the course , you will be working in our purpose-built professional kitchens and bistro cooking and serving our loyal customers . Work experience will be part of the course and helps you identify which area of professional cookery you would like a career in .
Entry Requirements
Four National 4s preferably including Communications / English
SVQ : Professional Cookery Level 4
NPA : Professional Cookery including two National 4s
Mature students with work experience and other qualifications may be considered
In addition , internal applicants will also require a positive Internal Learner Reference ( ILR )
Advanced Certificate : Hospitality and Events Operations ( Awaiting Approval )
Broadly comparable to SCQF Level 6

This exciting course is an excellent introduction to the Hospitality and Events Industry . It equips you with the knowledge and skills required for employment within these sectors and forms the basis for Hospitality Management . It is a practical course , where you will gain skills while working in our in-house purpose-built restaurant . You will develop communication and customer care skills in a customer facing role . The course will develop your confidence in all aspects of running events within hospitality .

This course will develop the skills you need to work in a pastry section , patisserie or artisan bakery . You will learn skills in craft baking , artisan breads , sweets and desserts , and specialist units such as marzipan and sugar products . Building on skills you learned at Level 5 , this course will develop you further , gaining confidence in your abilities both in practical and theory subjects .
Entry Requirements
One of the following :
Intermediate Certificate : Bakery including Core Skill at Level 5
Four National 5s at Grade C or above , preferably including English and Hospitality / Practical Cake Craft
Mature applicants with industry / work experience / other qualifications will be considered on an individual basis
In addition , internal applicants will require a positive Internal Learner Reference ( ILR )
