Ebiko freezes in the freshness of seafood
ONE of the most perishable food items in the world is fish , with E . coli and salmonella infections being almost synonymous with wrongly stored seafood .
It is in an effort to avoid these dangerous gastric infections that Japan ’ s Ebiko Corporation ( booth 5K2-01 ) has been working to deliver the real tastes of fresh seafood from Hokkaido to the world .
Its Logistics Centre in Otaru has a wide range of freezing facilities , with the largest freezing device able to maintain a temperature of -70 ° C , and boasting a daily production of up to 60 tonnes .
The company deals in domestic sales , online sales , import / export and in-house processing of live abalone , fresh sea urchin , frozen shrimp , various other fish and shellfish as well as some agricultural products .
It functions as a specialised warehouse for the wholesaling of fish and shellfish to end-users from across Japan .
“ We export spiny lobsters and scallops to destinations like Taiwan , France , South Korea , Hong Kong , Singapore , Thailand , Vietnam , India and Indonesia , while importing black tiger prawns , arch clams , surf clams , sweet shrimp and scallops from Taiwan , South Korea , Norway , Thailand , China and India ,” says Ebiko ’ s director , Takumi Shibata .
Ebiko has set rigorous standards for its production line since it was first founded , primarily due to the inherent importance of food safety . The company was among the first in the industry to use a machine capable of producing highly electrolyzed water , which is effective at killing the bacteria that cause food poisoning .
“ Our electrolyzed water producing machine delivers two types of water — highly acidic electrolyzed water that contains hypochlorous acid that is effective in killing bacteria , and alkalineion water that contains small amounts of hydroxide chemical compounds that effectively remove contamination from fat and protein ,” says Shibata .
The company is also proud of its automated fish roe measuring and filling apparatus , which is used for packing and storing salmon roe .
“ We only sell original salmon roe harvested from the beginning to the end of October off the coast of Rausu , which is known for its turbulent currents and swells ,” says Shibata .
“ This roe is believed to be among the highest quality salmon roe available in Japan . Only fully mature original roe is packaged and shipped to customers . The timing of this differs each year , depending on the fishing and spawning season .”
Another exclusive product in the company ’ s range is its ‘ Osechi boxes ’ which are packed with traditional Japanese New Year foods . The company uses a host of the finest quality seafood and other ingredients sourced from Hokkaido .
“ These unique boxes contain a perfect selection of foods that are guaranteed to fit the needs of various customers , and are so made to remain fresh for a long time ,” says Shibata .

hotel to cross-deploy its frontline employees for more value-added jobs ,” the minister said . “ To date , STB ’ s BIF has supported pilot projects in areas such as Artificial Intelligence ( AI ), the Internet of Things ( IoT ), robotics and facial recognition .”
Dr Koh also noted the manner in which local food companies had embraced innovation by consistently developing new food products in response to consumer demand . He said that the Singapore Agro-Food Enterprises Federation ( SAFEF ) would be supported by multiple government agencies in their aim to enhance local sourcing and sustainability , and drive exports of Singapore ’ s agri-food products .
The minister urged business owners interested in developing new technologies or undertaking the two shows complemented each other well .
“ They provide the ideal platform for the targeted establishment of contacts with importers and distributors , the retail trade , as well as hotel and catering industries with that from the wines
innovation to approach Enterprise Singapore ( ES ), the government agency that champions enterprise development .
“ Enterprise Singapore will continue to support companies to build capabilities and internationalise , through programmes such as the Capability Development Grant ( CDG ) and Global Company Partnership ( GCP ) grant ,” Dr Koh asserted .
“ In the longer term , the aggregation of demand in procurement and logistics fulfilment allows SMEs to achieve economies of scale , enabling them to lower the cost of food supplies . This e-sourcing platform will be launched at the end of July , and will benefit over 100 SMEs .”
For the food manufacturing sector , the Singapore Manufacturing Federation ( SMF ) has partnered with Enterprise Singapore to launch two key initiatives at and spirits sector ,” Reinhard said .
“ Global attention in the wine segment is shifting to Asia , with Asians becoming the biggest buyers of wine in 2017 , and being all set to consume more than four4 billion bottles of wine by the end of this year .”
FHA2018 . One is a leads finder website to bring the Singapore Pavilion at the exhibition to the Alibaba portal , in order to connect local businesses to overseas buyers beyond FHA .
The other is the SMF SMART App , an online B2B platform that facilitates consolidation of orders for overseas buyers and provides features such as traceability and authentication of products through the QR ( Quick Response ) code and IT security technology .
Dr Koh ended his address by lauding the UBM announcement that the next edition of FHA in 2020 would be expanded into two events — FHA-HoReCa ( Hotels , Restaurants & Cafes ) and FHA- Food & Beverage 2020 . These were bound to foster stronger crosssector collaboration and open doors to generate new business engagements for all participants .
