Dinner. The hardest part.

You’ve worked all day and you’re tired. You’re thinking of ordering takeout again instead of preparing a healthy dinner. I teach my clients the importance of preparing their own food to stay on track with health goals. My favorite easy dinner, turkey chili, takes 15 minutes to prepare, and you’ll get a lot of leftovers from a large batch.

Turkey Chili

Ingredients

2-3 pounds lean ground turkey

1 whole chopped onion

1 whole chopped green pepper

2-3 large cans diced tomatoes

1-2 small cans tomato paste

1-2 cans black beans

4 tablespoons or more chili powder

1 -2 tablespoons sea salt and pepper

3-4 tablespoons paprika

1 tablespoon each cumin, turmeric, garlic powder and onion powder

Prep

Brown ground turkey with 1 whole chopped onion and 1 whole chopped green pepper on the stove with sea salt and pepper.

While the meat mixture is cooking, add all other ingredients to your crockpot and stir well. Add the meat mixture when it’s cooked. Cook in the crockpot on low all day or on high for 3 hours.

Garnishes

Fresh shredded cheddar, chopped avocado, cilantro, chopped radish and chopped green onion. Any ingredient can be increased or omitted to taste.
