1 / 4cup Avocado oil or oil oil
8oz Fresh mirepoix-carrot celery and onions
1-1 / 2lb Boneless beef short ribs, approximately 1.33lb to 1.60lbs

1cup Fesh cilantro, chopped, plus more as needed for topping tacos
8 Street taco tortillas, heat in a pan or griddle then place in a tortilla warmer until ready to use, plus more as needed
1cup Oaxaca cheese, shredded, plus more as needed for tacos

Short Rib Birria Tacos
DIRECTIONS
Step 1
Set instant pot to sauté setting. Allow to get hot before adding oil and mirepoix. Stir-fry for 3 to 5 minutes then add short ribs and a generous pinch of salt and pepper.
Step 2
Stir-fry an additional 7 to 10 minutes or until short ribs are slightly colored. Add Birria taco starter then secure lid on instant pot.
Step 3
Set instant pot to meat / stew setting and increase timer to 40 minutes.
Step 4
When time is up, carefully release pressure on instant pot. Remove lid and shred short ribs into juice. Add fresh cilantro and season to taste.
Step 5
To build tacos, dip each warm tortilla in birria pot juice then add cheese and a little shredded meat.
Step 6
Top with any taco condiments desired. Repeat process with each additional taco.
