SERVES 1 Gwenola Getting in protein and fat is crucial for me while breastfeeding. I absolutely love Garden of Life’s Organic Plant Protein because of its smooth texture and superb flavor. Paired with some delicious fruits, hydrating coconut water and healthy fats from coconut butter, this is exactly how I like to start my morning. Top it off with some B-12 spray, which is amazing for energy, and I’m ready for whatever the day might bring my way! INGREDIENTS (USE ORGANIC) • 2 cups coconut water • 1 scoop Garden of Life Organic Plant Protein (Vanilla) • Garden of Life mykind Organics B-12 spray • 1 cup raspberries • 1 cup frozen banana chunks • 2 Tablespoons coconut butter DIRECTION Place all ingredients except the B-12 spray into a blender and blend until smooth. SERVES 4-6 I love homemade granola and this simple and delicious recipe can last several weeks refrigerated. This recipe is loaded with healthy protein and fats, and when I needed a late night or 3 a.m. snack after nursing Murphy, this was prefect. INGREDIENTS (USE ORGANIC) • 1½ cups chopped or slivered almonds • 1 cup quick oats (gluten free), optional • 1 cup chopped walnuts • 1 cup coconut flakes • ½ cup pumpkin seeds • ¼ cup Garden of Life Coconut Oil (melted) • ½ cup maple syrup • 1 teaspoon almond extract • 1 teaspoon cinnamon • ¼ teaspoon sea salt DIRECTION Preheat oven to 275 degrees. In a large bowl, combine all ingredients and mix well so everything is well coated with coconut oil. On a large cookie sheet, spread granola mixture into a single layer and bake for 30 minutes. Remove from oven, let granola cool and then crumble into bite-size pieces. Store in refrigerator for up to 3 weeks. It’s gluten free, dairy free, soy free and vegan.
