CASALE SOUP
INGREDIENTS:
- 300 g of dried vegetables (lentils, chikpeas and beans)
- 250 g of cereals (spelled and barley)
- 1 carrot
- 1 celery
- 1 onion
- Extra virgin oil
- 1 L of vegetables stock
- salt and pepper
PREPARATION
Rinse thoroughly legumes and put to soak (chickpeas and beans 12 hours, an hour or lentils ) .
Rinse also cereals .
In a pan saute carrot, celery and chopped onion.
Add the vegetables and grains. Cook a few minutes .
Cover with the hot vegetable stock
Cook about two hours , if it becomes detached too , add more boiling water .
Season with salt and pepper and serve your soup of the house , perhaps with a teaspoon of oil raw.
