OMELETTE
INGREDIENTS:
-Olive oil - 3/4 grated courgettes - 2 spoons of minced shallot - 5 eggs - 2 1/2 spoons of water - salt and black pepper - 1 spoon mixed minced fresh oregano - 2 spoons of grated parmigiano reggiano
PREPARATION:
Spray a skillet with olive oil and warm up. Add shallot and cook for a few minutes, stirring often. Add courgettes and cook for 5 minutes, stirring several times. Cover and cook until soft, keep stirring. While the courgettes are cooking, break the eggs in a bowl and whisk them. Add salt and pepper. Finally, add the cheese and whisk briefly. Pour the eggs slowly into the skillet, cook over low.
