RUBBIT hunter style

INGREDIENTS

Empty rabbit 800 g

Onion 100 g

White wine 60 g

Rosemary 2 sprigs

Laurel 2 leaves

Tomatoes 550 g

Salt q.b.

Pepper q.b.

Olive oil ev. 50 g

Garlic 1 clove

Vegetable broth 200 g

PREPARATION:

1. Put on fire the vegetable broth.

2. Wash the rabbit rubbing it and drying it.

3. Chop the onion and put it in a pan with some oil; join the garlic, the laurel and the rosemary; cook the ingredients for 5 minuts.

4. Flour the rabbit and add it in the pan with the others ingredients; cook high heat for 10 minuts mixing continuously.

5. Add salt and pepper .

6. Remove the garlic and simmer it with a glass of white wine.

7. Add the smashed tomatoes.

8. Cook for 50 minuts low heat adding the broth and mix.

9. Serve it hot side by polenta
