Let’ s Braai 1. Put the lamb cubes into a large glass container. 2. Place a pan over medium heat. Add the coriander seeds, cumin seeds, and cardamom pods. Toast lightly for a few minutes, stirring continuously. Transfer to a pestle and mortar and grind roughly.
3. Pour the oil into the same pan. Add the grated onion, bay leaves, and salt. Cook on low heat for 5 to 10 minutes until softened.
4. Add the garlic, ginger, curry powder, garam masala, turmeric, and cinnamon. Cook for 1-2 minutes.
5. Add the apricot chutney, red wine vinegar, and pepper. Let it cook for a few minutes until the mixture thickens and becomes sticky. Remove from the heat and allow to cool. 6. Stir in the Amazi. 7. Pour the cooled marinade over the lamb cubes and stir well to coat. Cover and chill in the fridge for 24 hours or more to enhance the flavour and tenderness.
8. Stuff each soaked apricot with a whole almond.
9. Thread the lamb cubes, pickling onions, almond-filled apricots, and lemon leaves onto the rosemary stalks or soaked skewers, ensuring they are not packed too tightly.
10. Place the sosaties on a medium-heat braai grid. Cook for 2-3 minutes per side, about 8-12 minutes in total, until the lamb is tender and the apricots and onions are lightly charred.
11. Baste with any remaining marinade during cooking. Serve hot.
