here is no set menu here as each dinner is supposed to
be unique and created at the behest of the chef. But to
give you an idea we first sampled pan seared foie gras
with a raspberry acid sauce served with a tropical avocado
and herbs salad and mango vinaigrette. A trou normand
lemongrass sorbet proved a wonderfully fresh palate cleanser
and then we had a choice to make from pan seared salmon
and scallop or grilled veal loin rolled on bacon topped with a
shallot comfit and thyme jus. All of which was topped off with a
nice and gooey melted chocolate cake with raspberry sauce
and vanilla ice cream.
Each course came with a glass of wine and you can choose
to add champagne to your package (it would have been
rude not to, so we did). There are also other culinary options.
You can choose to go on a local vibe with the True Balinese
Discovery Dinner or the Obsession Seafood Dinner with or
without lobster. And if you’re so enraptured by the idea at night,
you can choose a champagne breakfast and do it all again in
the morning.
