Organic Green Coconut Soup

- 5 organic scallions

- 1 1/2 teaspoons of good coconut oil - Dr. Bronner’s organic virgin coconut oil with the brown label is my favorite. It has a rich, nutty flavor.

- 2 1lb. bags of organic frozen peas

- 1 can of full fat coconut milk

- 3 cups of vegetable broth

- A handful of organic cilantro

- The juice of 1 medium to large organic lemon

Heat the vegetable stock and set aside.

Finely chop the green onion and combine with the coconut oil in a large

enough pan to hold all the ingredients.

Add the peas and coconut milk along with 3 cups of the hot vegetable stock. Bring to a boil, then turn down and simmer for a couple of minutes.

Remove from heat and add the cilantro with stems and the lemon juice. Pour into a blender and blend into smooth, creamy perfection. Season to your taste and top with your favorite topping. A drizzle of olive oil, chopped tomatoes or herbs, sour cream, chopped bacon - the possibilities are endless.

The lemon makes the soup taste like there is lemongrass in the recipe. It’s one of my all time favorite soups because the flavor is so intense. The best part, it’s super easy!
