Butter Cookies
Ingredients:
175g soft unsalted butter
200g castor sugar
2 large eggs
1t vanilla
400g flour
1t baking powder
1t salt
Method:
1. Cream the butter and the sugar
2. Add the eggs and vanilla
3. Sift the flour, baking powder and salt
4. Add the dry ingredients to the butter mixture and mix well
5. Form two discs with the dough and wrap it tightly with glad wrap
6. Let the dough rest in the fridge for at least one hour – I keep it in my fridge
overnight
7. Roll out the dough, 8-10 mm thick and press out your shapes. Remember a little
hole for your ribbon to go through.
8. Bake on a baking sheet sprayed with Spray and cook, for about 8-12 minutes at
180°C
9. Let the cookies cool down on the baking sheet for a short while and then place
them on a cooling rack with a spatula.
Icing:
For these cookies I make icing by using about 3 heaped table spoons of icing sugar in
a mug. I then add about ½tbs of boiling water and a few drops of lemon juice. Stir
this mix a bit and then add the gel coloring. If it is still too thick to spread, add more
lemon juice, drop by drop. I spread this icing onto the cookies with the back of a
teaspoon. I leave all the cookies flat out for about 3 days so the icing can dry. These
cookies do not do well in rainy weather. They are too soft and will just crumble away.
