8 SKiLLS & tRaDe RESTAURANTS’ RECRUITING DRIVE As a skill shortage looms in the industry a passion for working with food and helping people opened the door to one of Auckland’s finest restaurants for Jared Svedlund. By steve hart The 23-YeAr-old is a senior waiter at The french Café, and come november he will have been working at the fine dining restaurant for five years. “i took hospitality at lynfield College and it was my favourite class by far,” says Jared. “i wasn’t a very good cook though, so i went to the restaurant Association and asked about apprenticeships.” They sent him to Creghan Molloy-Wright, co-owner of The french Café, who was looking to take on an apprentice – she took one look at Jared and said “oui!”. This year he completed a two and-a-halfyear food & beverage course of on-the-job training and block-release study at MiT. he is disappointed the course is not currently available. “having the qualification shows restaurant managers that i can do silver service, and that i
