DAUGHTERS OF A KING roasted pumpkin chili

Ingredients
VIRTUE
- 1 small pumpkin or any type of squash - 1 cup chopped , seeded red or green pepper - ½ cup chopped onion ( medium ) - 3 cloves garlic , minced - 1 tablespoon olive oil - 2 ( 14 ½-ounce ) can diced tomatoes with or without chili spices , undrained - 1 ( 14-ounce ) can vegetable broth - 1 cup water - 1 ( 8-ounce ) can tomato sauce - 3 to 4 teaspoon chili powder - 1 tablespoon fresh oregano or ( 1 ) teaspoon dried oregano , crushed - 1 teaspoon ground cumin - ½ teaspoon black pepper - Several dashes of bottled hot pepper sauce ( optional ) - 3 ( 15-ounce ) cans of pinto beans , black beans , white or red kidney beans , rinsed and drained - 2 cups fresh or frozen whole kernel corn - 1 cup chopped zucchini ( 1 medium )
1 . Preheat oven to 450 °. 2 . To roast pumpkin , cut the pumpkin in half , remove the seeds . Save them ! - you can roast them for a delicious snack . ( See recipe on the next page .)
3 . Lightly coat the inside of the pumpkin with a bit of olive oil , then salt and pepper . 4 . Place pumpkin halves cut side down on a baking sheet lined with foil . 5 . Place pumpkin in the oven and roast for 15 minutes . 6 . Remove from oven and let cool for 15 minutes . 7 . When pumpkin is cool enough to handle , remove the skin and cut the pumpkin into 1-inch pieces . Set aside . 8 . In a 5-6 quart Dutch oven , cook green pepper , onion , and garlic in hot oil until tender , stirring occasionally . 9 . Stir in tomatoes , broth , water , tomato sauce , chili powder , dried oregano ( if using ), cumin , black pepper , and if desired , hot pepper sauce . 10 . Bring to boiling ; reduce heat . Simmer covered , for 10 minutes . 11 . Stir in roasted pumpkin , beans , corn , and zucchini . 12 . Return to boiling ; reduce heat . Simmer uncovered , for 10 minutes more . 13 . Stir in fresh oregano , if using .
