VIRTUE smoked gouda polenta with bacon jam

" This recipe won second place in a Crockpot Cookoff at my job and I ' ve received many requests from my co-workers to share the recipe ." Note : For this recipe you ' ll need 2 crock pots . -Elisa V
Ingredients
Smoked Gouda Polenta
- 3 cups polenta - 12 cups chicken stock - 2 cups whipping cream - 2 cups grated smoked Gouda cheese - 6 teaspoons salt
Directions
Combine all ingredients except the cheese into a medium-sized crock pot . Cook on low in crock pot uncovered for 6-8 hours , stirring occasionally . Thirty minutes prior to serving , add the shredded cheese and stir until cheese is completely melted .
To serve : spoon polenta on plates and top with warm bacon jam .

Bacon Jam
- 1.5 pounds of bacon - 2 yellow onions , chopped - 3 garlic cloves

- ½ cup apple cider vinegar - ½ cup brown sugar - ¼ cup maple syrup - ¾ cup coffee
1 . In a large pan , cook bacon over medium heat , until bacon is lightly browned . Transfer cooked bacon to paper towels to drain .
2 . Keep one tablespoon of the bacon fat in the pan ; add onions and garlic and cook until ingredients soften , about 6 minutes . 3 . Let mixture cool and add to a food processor along with the bacon and chop to small bits . 4 . Transfer bacon mixture to a crock pot . Add vinegar , brown sugar , maple syrup and coffee to crock pot . Cook on low for 4 hours ; stir occasionally .
