SWEET POTATOES CAKE
Ingredients :
1,300 kg of white sweet potatoes
4 eggs
100 g of flour
200 g of sugar
250 g of butter
2 vanilla pods
2 table spoon of rum

Reunion
Preparation :
1) Preheat the oven at 170°.
2) Boil potatoes, leave the skin
3) With a forkle or a potato masher, mash the potatoes
4) Cut butter in parts and add this at mash, then add sugar and eggs
5) Take a knife and cut vanilla pods in 2, in the length.
6) Separate vanilla pods in 2 and scrape inside half - pods using your knife to take the seeds
Add seeds at the preparation, cut finely the pods and add them too.
7) Finally, incorporate flour and rum. Brush the cake with a eggyolk. And take a forkle to
make the grid, for a traditional touch of Reunion Island.
8) Bake at 170°for 20 min, then lower the temperature to 150° for 40 min. Let cool before
degustating.
Recipe of Bonbons piments
(Chili bites)
Ingredients:
500g dried butter beans
A few leaves of fresh
coriander (chopped)
5 small green chillies (chopped)
A bunch of spring onions (chopped)
1 tea spoon of curcuma (turmeric powder)
1/2 tea spoon of cumin
fresh ginger
1 tea spoon of salt
Pepper
Vegetable oil
Method:

Soak the beans in water overnight (about 24 hours).
Costet
Drain the beans and peel off their skin.
Blend the beans until smooth.
Reunion
Add the herbs, spices, salt and pepper to the beans and mix everything well.
Make little balls with the mix (slightly smaller than a golf ball) and flatten them to look like mini
patties.
Heat vegetable oil in a deep pan (or deep fat fryer) and cook the chill bites for a few minutes
(until golden brown) in the hot oil. Drain and dry on kitchen paper before serving.
